The blade in this Casström No.10 SFK Curly Birch Stainless Steel knife making kit is made from 12C28N stainless steel, a steel that’s close to carbon steel when it comes to strength and hardness (HRC 57-59), which means that it’ll keep its edge for a long time and is very easy to sharpen.
