Maestro Wu G6 Damascus Japanese Yanagi Sushi Fish Knife is perfect for creating masterpieces of sliced fish. Available in 8 inch, 9 inch 10 inch and 12 inch sizes, they are stainless Damascus clad with a Hardness of RC 60 with wooden D-handles.
You'd be surprised how much different a properly sharpened sushi knife makes to the taste, too! We recommend having this style of knife sharpened to at least 5,000 grit.
