Am I terrible at sharpening? I've been sharpening knives to 17* but the edge looks significantly larger than this knife I just picked up with a tiny little edge you can barely
Had this professionally sharpened but I think they took it too far with the thinning and I think this may be a hole in my Stainless Cladding showing the Shirogami under it.
